VINIFICATION: Grapes are destemmed and crushed, followed by 6-8 hours of pre-fermentation maceration in a press (at low temperature). This is followed by soft pressing and static clarification with natural decantation, followed by debourbage (raking) of the sediment. Fermentation takes place in stainless steel tanks at low temperatures to enhance the aromatic bouquet. Aged for 4-5 months in stainless steel tanks, sur lies, and continues in the bottle, completely unfiltered, to give this UNFILTERED wine its distinctive aromas.
