Every expert knows that many factors contribute to the production of a good wine. Excellent vines, the right climatic conditions, good soil and precious hand of man. For centuries these conditions have found a perfect balance on Colline Novaresi, so much so that already in Roman times Plinio il Vecchio called them “asprigni” and as it reminds us of the auspicious engraving “Bibe vivas multis annis” on the ancient “Diatreta Trivulzio” cup found in 1680 in the Novara countryside.
The traditional vines are the backbone of today’s Novaresi wines, which have been recognized as the “Wine of Quality Produced in the Determined Region”, which are divided into eleven well-defined types including the Colline Novaresi Nebbiolo DOC and the Colline Novaresi Vespolina DOC. The Denomination of Controlled Origin (DOC) is the indication used to distinguish the wine that meets the requirements and conditions established in the relevant production specification. The denomination of controlled origin “Colline Novaresi” is in fact reserved for wines that respond to the strict impositions of the Italian Minister for Agricultural, Food and Forestry Resources (D.M. 5 November 1994). In order to protect the product, the production areas, the organoleptic conditions, the environmental areas, the production areas, the maximum yield of the lands and the grapes, the vinification operations, in addition to the characteristics of color, clarity, smell and taste and the minimum natural alcohol content are indicated.
